Launched in 2024, SDR Hospitality oversees operations at Big Sioux Burger, Dahlia, and Ironwood Steakhouse. Owners Josh Thoma, Kevin Fitzgerald and Nick O’Leary bring over 50+ years of combined experience, overseeing everything from concept creation, design and construction, menu development, and operations. The trio has been involved with some of the Twin Cities most acclaimed restaurants, including Smack Shack and Burger Dive, before expanding their portfolio to include the restaurants within the Steel District development in Sioux Falls.

With years of experience in the restaurant industry, Josh, Kevin and Nick have created a culture of excellence that translates to the teams they help lead. SDR hires and trains team members that exemplify the characteristics of quality service: friendly, compassionate, collaborative, communicative, and excellence. That excellence extends beyond our team too and is integrated into all aspects of our restaurants, from creating menus that feature the highest quality ingredients to cooking and serving food that always looks and tastes delicious.
